Paleo Pancakes, Waffles, and Cookies

I made paleo pancakes the other morning with a mix from Birch Benders. I have to say that I am so so so so sooooooooo happy that paleo, and now keto, is totally mainstream. Years back when I wanted pancakes, I either had to make the alternative pancakes using banana, egg, and almond butter or I had to make pancakes from scratch using various recipes because none of them had the perfect taste or consistency of regular wheat flour pancakes. Though the Birch Benders mix isn’t exactly the same consistency, it’s decently close. The paleo and keto mixes are similar in macros and ingredients, but the keto mix has like 2 or 3 less carbs than the paleo mix, which isn’t that big of a deal unless you’re trying to be hardcore about the carb counting (like if you’re striving to stay below 50 or 30 grams a day). The best part about this mix is that you just add water because it contains dehydrated eggs!

I usually start out frying the pancakes in avocado oil before adding in butter to avoid too much butter browning/burning.

Birch Benders also has a protein pancake mix and it has 16g of protein in a serving! It’s not gluten free so I don’t eat those ones often. I buy that mix for my work family (not sure if I’ve mentioned this in any previous post, but I am a nanny) because I always want the kids to get lots of protein in their diets and this mix is healthier than Bisquick. So I only eat the protein pancakes if I’m at work making pancakes for the kids and I can’t help myself lol

I think it was only a month ago that I saw Birch Benders has paleo waffles in the freezer section!! I was so excited because I do miss Eggo waffles. Buuuuuuut what I miss most about being paleo-ish/low-carb is sandwiches. Specifically breakfast sandwiches. So all but one time when I toasted these waffles, I used them as a base for a breakfast sandwich. My favorite is egg and cheese with whatever greens I have on hand.

I just wanted to write this post to express my gratitude for not having to cook/bake from scratch very often.

Oh yeah, and on Saturday I got together with my brother and sister to make Baby Yoda cookies using the trick we saw on Facebook where you use an angel cookie cutter. You cut off the head of the angel, and then it looks like Baby Yoda lol Instead of making cookie dough from scratch, as I have in years past either using recipes from Coconuts & Kettlebells or Against All Grain, I bought refrigerated paleo cookie dough and it tasted like a “normal” cookie!

The icing is just powder sugar and butter.

I ate like 4 and then brought home 3 for my husband. I left the rest with my siblings and parents otherwise I would have eaten all of them. Unfortunately I also left the cookie cutter at my parents’ house. I wanted to make these again with my work kids.
