Fajitas (sorta)

Tuesday night I made chicken fajitas and threw them on top of a bed of romaine lettuce and red cabbage! On the side we had guacamole from Trader Joe’s and organic,full-fat grass-fed Greek yogurt for sour cream. We rarely use sour cream so I don’t buy it unless I specifically plan to use a lot of it for something.

Last night I got home around 8:30 and my dinner options were limited. I almost skipped it altogether since it was late buuuut then I saw the leftover guac and felt inspired/greedy (if I didn’t take advantage, it would be gone by the time I get home today…. husband eats everything in sight lol).

Cooked up some peppers and two mushrooms.

Threw in some eggs and attempted an omelet. Clearly the flipping didn’t go very well (meaning it didn’t even happen) so it became a scramble instead!
