This past Saturday I discovered the yumminesss that is pesto. How I have avoided pesto all these years to not have known how incredible it is, is beyond me. I made lamb meatballs with a pesto sauce that should’ve gone with noodles but I was making a quick pre-beach snack.
Anyway I wanted more pesto delight today and didn’t want to wait until dinner. I took this recipe and modified it by using a can of salmon and cashew meal in place of panko. I broiled this little creation and BAM instant goodness!
