Yesterday I got a bit crazy and added crab meat (from a can) to a Real Good Foods cheese enchilada.

It was delightfully satisfying for a quick lunch.

For dinner I slow cooked Filipino chicken adobo using the recipe from Mark’s Daily Apple. It’s a primal version so it only uses coconut aminos, but I still throw in some tamari (gluten free soy sauce) for good measure. Also, I didn’t have fresh ginger so I used ginger powder. It turned out excellent. When I make this dish, I pressure cook it because I usually don’t make the time to put things together early enough to slow cook (and I don’t like to have appliances on when I’m not home). I find that it is more flavorful when slow cooked and the sauce is darker.

We went to the beach on Sunday and ended up eating dinner out there. I hadn’t been to those beach bars in a few years (except to use the bathroom once at PCI last summer– obviously it was disgusting) so it was fun getting back to it. We didn’t go near PCI because we could see that there was no way to get to the spot to order food or a drink so we went to Jimmy B’s. It’s basically the same as it’s been for years so it was comforting and reassuring. It was busy, but not crowded so it was a good atmosphere and I liked that there are people of all ages there rather than just young people in their 20s and 30s. Anyway, I ate a bunch of breaded and fried food, which made my stomach feel so bloated for the rest of the night. I do not regret the fried pickles, but I do regret the fish tacos as the fish was breaded (I didn’t know it was breaded, otherwise I would have gone with pulled pork) and I also regret ordering fries rather than a side salad like my husband did (the fries were excellent though lol). I get fish tacos all the time and I eat it with the flour tortillas and feel fine, but the difference is that it’s always grilled fish. This meal was overkill for me. It was delicious, but I just didn’t feel great after so I wouldn’t do that to myself again. Next time I’ll get what my husband ordered. And I’ll likely be a bit tipsy so I’ll go ahead and get those fried pickles again.
