Salmon + Broccoli

It’s that time of year– Publix has fresh, wild-caught Alaskan sockeye salmon 😋 AAAAAAAAND it’s currently on sale for $9.99/lb as opposed to like $19.99/lb. Here in Florida we usually only have access to frozen wild sockeye salmon so this is a big deal. The texture of frozen fish is nothing near as good as fresh fish. We used to eat frozen mahi mahi pretty regularly until I had fresh mahi at a restaurant and realized how unexciting frozen fish actually is.

I was curious as to whether or not it’s possible to crisp frozen broccoli. Turns out that it is! Aside from using high heat (450 degrees f), the trick is to put the sheet pan in the oven as you’re preheating so that once you put the broccoli on it, all the water immediately evaporates.

That’s the 1.5lb slab I bought today! A little bit of the tail is leftover. I have it in the refrigerator on ice in hopes of it staying fresh. I’ll cook the rest for a lunch salad.
