I was flipping through my Primal Blueprint Cookbook and saw a recipe for enchiladas. Naturally I was intrigued and decided to give it a go. I purchased all of the ingredients and began cooking without having read through the recipe first. Had I done so, I would have gladly purchased a can of whole roasted tomatoes rather than spending 30ish minutes blackening 6 large tomatoes in the broiler. Same goes for the poblano peppers that needed to be blackened and peeled.
The recipe calls for the use of egg whites + cream or half&half for the tortilla replacement. I was not able to make them tortilla-like so I couldn’t wrap up the chicken/sauce/cheese. It turned out more like a casserole…. or like a Mexican lasagna lol
I made it with chicken and some leftover slowcooker pork shoulder.
Served with the usual salad
There’s a promising tortilla recipe from Against All Grain that I’d like to try next time. Since making tortillas will take up even more time I will most definitely buy canned tomatoes and canned green chilies.
