Since my husband has today off we went out for dinner and drinks with friends last night. We wanted something cheap with a fun atmosphere so we choose one of our go-to spots, Red Mesa Cantina.
They had an open face quesadilla on special. I really miss quesadillas and I feel like it would be stupid to order one only to peel it apart and scrape the cheese off the tortillas with my teeth. But is it stupid to order an open face quesadilla and scrape all the goodness with a fork? It kinda is lol But I decided to treat myself and go for it!
Open Face Chicken Quesadilla: grilled chicken mojo, sundried tomatoes, cotija cheese, queso fresco, jalapeño cream sauce, arugula and Serrano chile.
YUUUUUM! The queso fresco was on the bottom so the melted cheese wasn’t stuck to the tortilla. I chowed down work my fork. It was worth indulging in.
Since it’s not a substantial meal without the tortilla, I also ordered seafood mofongo! When I go to Cantina, it’s usually for brunch or lunch so I’m not familiar with the dinner menu. I didn’t even realize this until my friend ordered the seafood mofongo, which caught my attention because I didn’t know this existed! I expected it to be mofongo made with seafood instead of pork but it was a seafood dish with traditional mofongo plopped down in the middle.
It was AMAZING! I’m never appetized by the thought or sight of calamari because in my experience it’s usually got a rubbery/chewy texture. But when it’s cooked right, it’s incredible and not grossly fishy.
I thoroughly enjoyed last night’s food along with a few hand-crafted margaritas which consists of tequila, lime juice and very little agave.
